I have and love the America’s Test Kitchen How Can It Be Gluten Free cookbook. They do an excellent job of explaining the hows and whys of each recipe. Some of the recipes seem overly complicated, but every one that I’ve gone to the extra effort with has been worth it. I also use the flour blend they recommend in most of my other GF cooking.
