Recipe for Baked Apricot, Almond Brie from Trader Joe’s (under $10, great for parties!)

It’s holiday party season and if you’re wondering what to bring. . .let me brie direct and tell you – brie-ing this! It’s relatively inexpensive (much more so than a veggie tray or pre-made dip) and everyone will ooooh and ahh over it. This recipe is for Baked Apricot, Almond Brie and it is actually a Trader Joe’s recipe. I picked up all the ingredients today from Trader Joe’s for about $10 and I have extra ingredients left over for additional servings in the future.

Trader Joe’s Brie, preferably DOUBLE creme – about $3.00 (done by weight)

Trader Joe’s raw sliced almonds – $2.49 each

Trader Joe’s organic reduced sugar apricot preserves – $2.99 each

Trader Joe’s water crackers – $1.29

Apple slices (optional)

(Before baking)

Unwrap Brie and put into a baking dish. Make sure the baking dish has edges, as the brie will spread when it melts

Top with two generous tablespoons of the apricot preserves

Sprinkle a handful of sliced almonds on top

Cover with foil

Bake at 400 degrees for about 12-14 minutes

We actually ended up eating this for dinner last night! We ate it with apples which I thought was even better than the water crackers.  Brie is one of those things you can find marked down in the cheese clearance section at Fred Meyer pretty often!

p.s. Don’t kid yourself, there won’t be any leftovers to take home. So you might want to buy two brie wedges so you can make it again for yourself. 🙂

(Thanks, Brooke!)
